  Children don't begin learning with vayikra. They begin with Beraishis.

    As you can see from the sources in the curriculum that they start from Vayikra.
    
    The answer is, that when they do the "Hachoso lecheder" they say the first Posuk in Vayikro. When they actually start learning in a class setting  they start from Breshis (many start from Lecg Lecha etc.)
