Whose mitzvah is it, father's or son's
Isn't this the same question as for a bris? The father must do it at 8 days old or afterwards, but if he never did, the son must arrange a bris for himself.

But...can the father appoint the Cohen who receives the silver to be his shaliach to "give" it to himself? (Only 2 partners)

Not if the father has a second wife who also gives birth to a bechor.

We've seen that adult bechorim who never had a pidyon haben
Must make the pidyon haben themselves once they found out it was never done.
Can such an adult bechor make a shaliach?

Shechechianu made for a benefit
Both the father and the Cohen have a benefit, a different benefit.
The Cohen gets the 5 silver coins
The father gets to keep his son, gets to have his son redeemed.
